❤️: We got the signature Suckling Piglet—half roasted Segovian style with a selection of sauces. It’s the Spanish tradition to use a plate to cut the roast as the chefs take incredible pride in the tenderness of their roast pigs and prove it by showcasing how even a blunt plate can easily slice through the piglet.
