  1. 3 Prawns
  2. 50 g. Rice noodle
  3. 1 cup Tamarind juice (can be substituted with tamarind paste)
  4. 1 Tbs. Palm sugar
  5. 2 Tbs. Fish sauce
  6. 1 Tbs. Preserved radish
  7. 1 Tbs. Sliced garlic chives
  8. 1 Tbs. Tofu
  9. 1 cup Bean sprout
  10. 1 Egg (for stir frying)
  11. 1 Egg (for egg wrap)
  12. 1 Tbs. Chopped garlic
  13. 1 Tbs. Oil
  14. 1 Tbs. Dried salted shrimp
  15. Crushed peanut
  16. Ground chili
  17. Lime
  18. Sugar
  19. Bean sprout and garlic chives

Process

STEP 1 : Making the Pad Thai Sauce

  • First, let’s make the Pad Thai sauce. Take the pan on the stove with medium heat, add tamarind juice, palm sugar, and fish sauce, then boil until thickened.

STEP 2 : Making Pad Thai

  • Put a pan on the stove with medium heat. Add oil, chopped garlic, preserved radish, and salted dried shrimp. Stir until it turns golden brown.
  • Add prawns, and egg. Stir until cooked.
  • Add Pad Thai sauce and rice noodle, and stir until soft. Then, add bean sprout and sliced garlic chives, and quickly stir. Take the pan off and set aside.

STEP 3 : Making egg wrap + wrapping 

  • Put a pan on the stove with medium heat.
  • Crack egg into a mixing bowl and beat it well. Then, pour the egg onto the center of the hot pan and tilt the pan to spread the egg all around.
  • Separate prawn from the Pad Thai (for decoration). Put Pad Thai into the cooked egg and wrap it up. Then, flip it to your serving dish. 
  • Put the prawns, lime, green sprout, and garlic chives beside.
  • Cross the egg open to show the Pad Thai inside. Serve with condiments such as sugar and ground chili.
