If, like me, you like the taste and tenderness of a good little bistro hazelnut coffee, you will really like this new frozen macaron. Its name is “Frozen Macaroon Coffee Hazelnut”.
Seriously, it's delicious. I personally rate it 10/10. I love the subtle taste of the 2 large hats (or shells) of the coffee macaroon and the melting hazelnut ice cream. It is exquisitely sweet.
The frozen macaroons from Rossini Ice Cream in Koh Samui are made by two French artisans. The master ice cream maker Rossini (Cruaud family) and the pastry chef-baker Papé. It's a new challenge each time for each of the two creators. Here, once again, congratulations for the wonderful result.
A frozen macaroon is the assembly of two caps made up of crushed almonds, icing sugar, sugar, egg whites in which flavored ice cream and slivered almond shavings are placed around the edge. Everything is then frozen for storage.
It is important to let the macaron stand for one minute at room temperature before eating it. The cooling effect tends to anesthetize the palate and thus suppress the taste of food. After a minute, here in Koh Samui where the average temperature is 30 degrees all year round, the macaroon softens. We can therefore taste it, before the ice cream melts. At the Atelier Rossini Ice Cream shop you can eat it in its cardboard cone (recyclable). Many restaurants on the island of Koh Samui feature the frozen macaron on their dessert plate. That said, I love eating it with my fingers.
Rossini Ice Cream now offers 4 frozen macaroons. Chocolate and pistachio; Almond and bourbon vanilla; Raspberry and raspberry/cream; Hazelnut coffee.
At the master ice cream parlor Rossini, the different and large frozen macaroons weigh an average of 140 g, or 10 times more than a standard macaroon. The price in store is 140 THB for a frozen macaron (~ 3.80€ or ~ CHF3.90). A single macaron is hearty enough for dessert. My advice: enjoy it on the spot on the terrace, accompanied by a good coffee (60 THB).
